Tuo Zaafi is a typical Ghanaian dish from the northern portion of the country. It is one of the most popular dishes in the region and in Ghana.

Tuozafi can be made with millet or maize dough, depending on the preferences of the consumer, with the finished product appearing white and rounder.

The dish is served with an unique stew made mostly of ayoyo, a type of native leaf. Corn or millet dough, ayoyo leaves, tomatoes, onions, smoke or dried fish depending on the taste of the consumer, palm oil, pepper, and salt are the primary ingredients required to make Tuozaafi and stew.

Even though Tuo Zaafi is a traditional food from the Northern region but it’s gain it popularity in the country and it is now enjoyed by every one in the country irrespective of their ethnic groups or where they stay.

However, in most parts of Ghana, food is sold at chop shops and on street corners rather than being prepared at home by customers, owing to the fact that most southerners have no understanding how to prepare it.

In this article, I will show you the simple ways in preparation of Tuo Zaafi and the ayoyo stew.

How To Prepare Tuo Zaafi

Ayoyo leaves are used frequently in Tuozafi stew. Cutting the bitter leaves into small, tiny pieces is the first stage in the preparation process. After that, boil water for a few minutes, then drop the cut leaves into the water to soften them. After a few minutes, check the suppleness of the leaves. If you don’t mind the softness and sliminess, remove it from the heat and drain the water with a sieve.

The next step is to steam your meat or fish with onion, pepper, tomatoes, and additional spices of your choice. Add palm oil to the steamed meat and other ingredients and continue to cook until the mixture becomes slimy, then pour in the soft ayoyo leaves and set the bowl on fire for 10 minutes.

To make the TZ, first boil some water on the stove. Mix the cornflour with cold water while the water is boiling. Pour the cornflour solution into the boiling water and stir once it has reached the desired temperature. Stir constantly to avoid the formation of microscopic lumps. To make the porridge tougher, add flour in small amounts at a time. Continue doing thus until the TZ is sufficiently difficult.
